Banana Apple Mini Muffins - Perfect for Toddlers!


Happy weekend!  I had a couple of bananas that were very ripe and needed to be used.  I absolutely hate wasting food.  If you follow me on Instagram, you've seen the dishes I've put together with what I have in my fridge.  This is one of them.

I decided to use my mini muffin pan to make them easy to throw in a lunch box and for little hands to hold.

Ingredients

1/2      cup organic raw agave
1/2
cup organic vegetable oil

eggs
2
very ripe bananas, mashed
1
teaspoon vanilla
1 2/3
cups organic whole wheat flour
1
teaspoon baking soda
1/2
teaspoon salt
1/2
teaspoon ground cinnamon
1/2
     medium apple; peeled and chopped

Directions

Preheat over to 375 degrees.  Grease two (2) mini muffin pans or line with paper muffin cups.

Blend together the agave, oil and eggs.

Stir in mashed bananas and vanilla.

Mix in the rest of the dry ingredients and apple pieces.

Fill each muffin cup and bake for 10 minutes.

*You can use a regular sized muffin pan, just adjust the oven time to 13-15 minutes



Coral Silk


My last nail post reminded me how much a liked the Covergirl Outlast Nail Gloss. So I went out to CVS and picked up a few more colors. This bright, almost neon, coral was perfect for summer. They seriously have the best coverage and staying power for a drugstore nail polish.
