Eats: Kale & Quinoa Patties


-        2 ½ cups cooked quinoa (I used organic red quinoa)
-        4 cups chopped kale, cleaned and stems removed
-        3 large eggs, beaten
-        1 tsp. sea salt
-        ½ yellow onion, diced
-        ½ cups green onion, chopped (I didn’t have any on hand so I skipped this)
-        ½ cup grated parmesan cheese
-        2 cloves of garlic, minced
-        ½ cup bread crumbs
-        2 tbs. olive oil, will need more for frying
1.      Combine quinoa, eggs, cheese, green onion and salt in a large bowl
2.      Heat 2 tbs. olive oil in a pan; add onions and garlic, cook until soft
3.      Add kale to pan and cook until soft
4.      Add kale mixture into quinoa mixture and combine
5.      Add oil to a new/clean pan, just enough to coat the bottom of the pan
6.      Form mixture into palm sized patties
7.      Place patties into the pan, cooking until brown; about 3-4 minutes on each side
8.      Remove patties and place on a plate covered with paper towel to soak up the excess oil
Serving suggestions:
-        Serve with a side of greek yogurt topped with green onion
-        Serve with a side of hummus
-        Serve on top of a bed of mixed greens and vinegrette
These patties are versatile and they can be really be served in a huge variety of ways.  I actually made these hoping to have left overs for lunch over the next couple of days, but they went pretty quick. My husband and toddler loved them too much, I guess.
