My Eats: Easy Onion Rolls

I was visiting my sister and needed to whip up a quick side/bread to have with our dinner.  I found the perfect savory roll recipe from good 'ole Real Simple.  
3tbs. olive oil
3 medium size onions, finely chopped
1/4c.  + 1tsp. sugar
(2) 0.25-oz. packets active dry yeast
2 large eggs
6tbs. unsalted butter, melted + more for the pan
6c. flour + more for shaping dough
1. Heat 2tbs. of olive oil in a large pan over medium heat.  Add the onions, 1tsp. of sugar and 1/2 tsp. salt.  Cook until the onions are brown, about 15-18 minutes.
2. Put 2c. of warm tap water in a large bowl.  Sprinkle the yeast over the water and let stand until dissolved/foamy, about 4-5 minutes.  Whisk in the eggs, 4tbs. of butter, the rest of hte sugar and 1tsp. of salt.  Add the flour and 3/4 of the sauteed onions, mix until dough forms.  Brush the top of the dough with the rest of the olive oil and cover with plastic wrap to let it rise until it has doubled in size, about an hour.  It said to put it in a "warm" place, but I just put it in the microwave - I did not turn the microwave on, I just left it in there to keep it out of the way.
3. Butter a 9x13 baking pan.  After the dough has risen, punch it down, literally, to get the air out.  Flour your hands and form 16 balls with the dough.  Arrange the dough ball in the pan, spacing evenly.  Mine were placed in there pretty tight.  Cover the pan loosely with the plastic wrap and let it rise until doubled in bulk, about 30-40 minutes.  Pre-heat the oven to 400 degrees.
4. Remove the plastic wrap and brush the dough with 2tbs. melted butter.  Bake until golden, about 18-22 minutes.  I took mine out at 19 minutes and they were perfect.  Let the rolls cool in the pan for about 5 mintues before serving.
