Pinned it, Did it: Cinnamon Sugar Baked Doughnuts


I was at the hair salon some time ago and we came accross the subject of Pinterest. We talked about how much of a time waster it is, flipping though all the photos, etc.  Then she asked me if I ever made anything that I pinned.  My response - No. Hmm...I mean I've gotten ideas from it. Does that count?  Anyway, I thought I would go ahead and actually make something that I pinned!  Enter: Cinnamon Sugar Doughnuts from the blog Baker Bettie.
 
The only things I did different was add cinnamon and nutmeg into the batter, substitute whole wheat flour instead of all-purpose, add more cinnamon to the topping and use a regular size doughnut pan.
 
Here's what you'll need:
 
Doughnuts:
 
- 1/3 cup unsalted butter, plus extra for the pan, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla
- 2 tsp baking powder
- pinch salt
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1-1/2 cups whole wheat flour
 
Topping:
 
- 1/4 cup butter, melted
- 1/4 cup sugar
- 1 tsp cinnamon
 
Doughnuts:
 
1. Preheat oven to 325ºF
2. Using some of the extra butter, lightly coat each well of the doughnut pan
3. In a medium bowl, mix the butter and sugar until creamy
4. Add the egg, milk, and vanilla and mix until combined (mixture will look curdled)
5. Mix in the baking powder, then the salt, then the nutmeg and cinnamon
6. Mix in the flour just until combined
7. Transfer mixture into a ziplock type baggie with the tip cut off. Pipe into the pan only filling ½ of the way fill.
8. Bake for 8-10 minutes or until brown
 
**Allow to cool slightly before dipping in topping
 
Topping:
 
1. Melt the butter for the topping and combine the cinnamon and sugar
2. Dip each donut lightly in butter then roll in cinnamon and sugar
